Chipotle-Lime

Our Chipotle-Lime rub marries 2 great flavors to bring a burst of taste to your chicken, fish, beef, seafood, and pork dishes. Chipotle is a smoked jalapeno often used in Mexican food. Limes are a common accompaniment in Mexican cuisine, being added to everything from beer and cocktails to soups, fish and beef. Combine the spicy and smoky earthiness of chipotle with the tangy freshness of  lime, and you’ve got a meal that everyone will crave!
 
 
 
Chipotle-Lime Shrimp and Vegetables: Cut large pieces of 1/2 sweet onion & 1 red pepper, saute in olive oil on medium heat until just tender, about 3 minutes. Coat about 12 med-large (21-25 count) raw shrimp with Chipotle-Lime. Add to pan & continue to saute until the shrimp are cooked through, about 3-5 minutes. Add 1 can artichoke hearts, cut in half (not the oil marinated artichoke hearts), for the last minute or 2, to the pan to heat through. Add ~3-4 TBSP white wine or vermouth to deglaze. Serve and enjoy! Optional - I add an extra 1-2 tsp chipotle-lime seasoning as I saute everything to spice it up a little. I also squirt on fresh lime juice as I serve it.
